Cacao Family Farms has produced and supplied kosher cacao products for U.S., European and Middle Eastern markets since the late nineties. We use both Sanchez and Hispaniola Cacao Beans to produce Cacao Butter, Cacao Paste, Cacao Nibs and Cacao Powder.

Cacao Powder

Cacao Powder is the most concentrated source of cacao. Cacao Powder is the product left after grinding and hydraulic cold pressing Cacao Paste. It is also one of the healthiest cacao products packed with antioxidants. Food manufacturers who care about quality know that using the right Cacao Powder for their products is essential. Cacao Powders enhance the flavor, texture, and mouthfeel of countless food products.

Storage:

Frequent Uses:

Cacao Powder is most commonly used in coatings, cream fillings, spreads, sauces, and syrups. This product is specially developed for its use in chocolate drinks, dairy products, breakfast or instant Cacao mixes, cookies and pastry, and confectionery products in general.

Cacao Butter

Cacao Butter is the fat of the Cacao Paste, extracted by hydraulic cold pressure from Cacao Paste. It is a Pure Prime Pressure (PPP) butter, thus maintaining all its extraordinary crystallization properties and the natural low fatty acid content of selected Cacao Paste. Natural Cacao Butter is a non-deodorized with delicious chocolate aroma with its natural characteristics. Natural Cacao Butter is widely used in the cosmetics and soap industries. In the food industry, it is used to make wonderful white chocolate.


Cacao Butter makes an excellent skin moisturizer, plus it does more than just hydrate the skin. Cacao Butter saturated fats are especially beneficial for healing dry, cracked skin because they’re easily absorbed and remain on the skin for hours. Cacao Butter is normally hard at room temperature and melts at body temperature. Please see shipping disclaimer below.


Frequent Uses:

Cacao Butter has a variety of uses including, Bean-to-Bar chocolate making, white chocolate making, skin products, soaps, candle making, thinning of chocolate - chocolate fountains, fudges, creams and chocolate mousses.


SHIPPING DISCLAIMER:

Occasionally during summertime, some of the Chocolate, Cacao Butter and Cacao Paste/Mass might melt slightly during shipping. We do not use cold-packing materials for regular shipments because we try to keep our shipping and packing costs low in order to give our customers the most competitive prices. You have the choice to ask for special cold packing for an additional cost. However, this will not guarantee that the product will arrive in sound condition

Cacao Nibs

Cacao Nibs are Cacao Paste that have been lightly roasted, separated from their husks and broken into smaller pieces. This product is an excellent source of antioxidants, with a pleasant semi-bitter flavor. Cacao Nibs can be eaten as a snack or added to baked goods and other dishes for added crunch and chocolaty flavor. They are also a popular ingredient with beer brewers and wineries.


Our nibs are lightly roasted. They can be further roasted to acquire different roasting strengths for different flavor profiles. They have a very robust delicious chocolate aroma, characteristic of the pure aroma Trinitario bean. Due to the nature of the product, Cacao Nibs are not guaranteed to be completely free of foreign materials, such as cacao shell and husk. See disclaimer below.

Cacao Nibs are an industrial ingredient in the Cacao industry. They are safe to consume since they were washed and air dried. However, very small amounts of naturally occurring impurities such as small pieces of branches, cacao shell, small stones, among others might be present since it is an agricultural raw material that has not been further processed...

Cacao Nibs are used as nut or chocolate chip substitute as a flavor kick in cereal, yogurt, oatmeal, ice cream, cookies, smoothies, shakes, energy bars, coffee, beverages, beer brewing (be aware of fat content), bean-to-bar chocolate making, and teas.

Cacao Paste

Otherwise referred to as Cacao Mass or Paste, Cacao Paste is made from the Trinitario Cacao, one of the few fine aromatic beans of the world. Cacao Paste is the product resulting from roasting, grinding and refining the Cacao Paste after drying, cleaning, and winnowing. No GMOs or additives are used in this process.


This product has an excellent aroma and taste. Cacao Paste is the heart of chocolate. Through further processing, Cacao Paste is able to yield both Cacao Butter and Cacao Powder. These are the key raw ingredients for making milk and dark chocolates.

Cacao Paste is used to make premium chocolates that require single origin Cacao Paste of the highest aromatic quality. It can also be used to make cookies, pastry, ice cream, beverages, beer brewing (be aware of fat content) teas, mixing your own chocolate couverture or compound, fudges, sauces, energy bars, brownies etc

Cacao Beans

The highest graded, single origin, Trinitario Cacao Beans are one of the few fine aromatic beans in the world. This high-quality Cacao Beans is preferred by chocolate makers due to its superior and strong, unique aroma, prized for its rich and smooth flavor. We have Trinitario Tree varieties that produce both Sanchez and Hispaniola Cacao Beans.


Sanchez Cacao Beans are organic, non-fermented and sun-dried. Sanchez is not a variety of Cacao Beans it is the name given to non-fermented cacao from the Dominican Republic. Hispaniola Cacao Beans undergo a unique process of fermentation. Hispaniola is not a variety of Cacao Beans it is the name given to fermented Cacao Beans from the Dominican Republic.


The fermentation process

Our Hispaniola beans are fully fermented and sun-dried.


During fermentation, the cacao pulp clinging to the beans matures and turns into a liquid, which drains away and the true chocolate flavor starts to develop


We use three-stage

box methods

for fermentation.


Cacao Paste stay on each box for 2 days (6 days total). When fermentation is complete, the wet mass of beans is naturally sun-dried.


Why Fermentation?

The principal effect of fermentation is to eliminate or drastically reduce acidity and to increase the cacao's flavor density.

Cocoa Family processing facilities process CACAO PRODUCTS EXCLUSIVELY. The Cacao products we supply are 100% CACAO. It does not include any additives, preservatives, carriers, and/or processing aids.


Our facilities are free of gluten, sulfites, and the 8 major allergens: milk, eggs, peanuts, tree nuts (almonds, cashews, etc.), fish, shellfish, soy, and wheat. No solvents, added sulfites or other chemical substances are used in the process. All our Cacao products are also GLUTEN FREE, and SULPHITES FREE, and are produced and packaged in gluten/ sulfites free facilities, no other products are produced or packaged in our facility which would cause the 8 major allergens, gluten or sulfites cross-contamination.
