  • How is Dominican grown cacao different?

    Dominican cacao has strong characteristics, non-blank taste, used by artisan gourmet chefs around the world. 

  • Does Cacao contain Gluten?

    No, cacao does not contain gluten. 

  • Is cacao genetically modified?

    No, cacao is not genetically modified (GMO).

    There are not commercially available genetically modified (GMO) cacao trees on the market. Cacao is traditionally propagated through seed selection, grafting, and hybrid breeding techniques rather than genetic modification.  

  • What variety of cacao trees do you grow?

    We grow Trinitario variety. 

  • What grades of beans do you produce?

    We produce two main grades of cacao beans, Sanchez and Hispaniola. 

  • What is Trinitario Cacao?

    Trinitario cacao is a hybrid of Criollo and Forastero cacao, combining rich flavor with stronger trees and higher yields. 

  • What are Sanchez cacao beans?

    Sanchez cacao beans are non-fermented, sun-dried cacao beans from the Dominican Republic. 

  • What are Hispaniola cacao beans?

    Hispaniola cacao beans are a high-quality, fully fermented, sun-dried cacao bean from the Dominican Republic. 

  • Why are cacao beans fermented prior drying?

    Fermentation brings out the taste and aroma in cacao beans.
